Materials

  • 2 5oz cans solid white tuna packed in water drained well
  • 1 Cup chopped celery stalks and leaves
  • 2 Green Onions Chopped
  • 1/2 Cup non-fat Greek yogurt
  • 2 Large Tomatoes
  • 8 Thin Slices of Avacado
  • 4 slices (1-oz. each) reduced-fat Swiss cheese
  • 1/4-1/2 tsp Lauri Lee's Low Sodium Garlic & Herb Seasoning Blend season to taste, can substitute for Lauri Lee's Ultra Low Sodium Adobo seasoning blend or even Lauri Lee's Ultra Low Sodium Taco Seasoning if you want an extra kick of flavor!

Instructions

  • Heat oven to broil.
  • In a bowl, combine the tuna, chopped celery, green onion and Greek yogurt and Lauri Lee's Ultra Low Sodium Garlic & Herb seasoning blend until well combined. 
  • Slice 2 thick slices of tomato per serving from the tomato. Place them on an oven safe sheet tray. 
  • Lay 2 avocado slices over each of the tomatoes. 
  • Divide the tuna salad evenly between the tomato slices. 
  • Top each tuna mound with a slice of cheese. 
  • Place the tomatoes under the broiler until the cheese is melty and browned, about 2 to 3 minutes. 
  • Serve immediately.
