
Adobo Chicken Quesadilla

Ingredients
- 4 boneless chicken breasts
- 1 tbsp Lauri Lee's Ultra Low Sodium Adobo Seasoning Blend Season to taste
- 1 4 oz can of green chilis
- 1 small onion chopped
- 1 tsp cilantro optional
- 1 clove garlic minced
- 8 tbsp shredded cheddar or cheddar jack cheese
- 1 small can sliced low sodium black olives optional
- 4 Low sodium flour tortillas
- 1-2 tbsp butter
Instructions
- Season both sides of chicken with Lauri Lee's Ultra Low Sodium Seasoning Blend and fry in olive oil over med heat until done (internal temp 165).
- Cut chicken into small pieces and add back to the pan with green chilis, onions, cilantro and garlic until everything is warmed up and onion is soft.
- Add chicken filling to a flour tortilla, top with cheese and sliced olives and fold over to close.
- Melt 1 tbsp of butter in frying pan and then fry quesadilla in butter until golden brown and cheese is melted.
- Top with low sodium Pico De Gallo and Guacamole (optional), serve and enjoy!
