Baked Potato Skins Topped with Lauri Lee’s Low Sodium Party Dips
These crispy potato skins are topped with sharp cheddar and Monterey Jack cheese, as well as bacon. They are easy to prepare and make great go-to appetizers. This snack is the perfect complement for football season and entertaining. Topped with our Lauri Lee's Low Sodium Party Dips, they are sure to be a hit at any party!
Ingredients
- 6 medium Russet potatoes
- 1½ tbsp canola oil or olive oil
- 3 tbsp butter
- ½ cup cheddar cheese shredded
- ½ cup Monterey Jack cheese shredded
- ½ tsp Lauri Lee's Ultra Low Sodium Garlic & Herb Herb Seasoning Blend
- 4 slices low sodium bacon cooked crispy and chopped into small bits
- 1 green onion finely chopped, Optional
- 1 batch Lauri Lee's Low Sodium Party Dips any flavor (we suggest making them all), prepared in sour cream or plain yogurt
- Sea Salt to taste, Optional
Instructions
- Preheat oven to 375℉.
- Scrub potatoes, dry thoroughly and poke holes in the potatoes several times with the tines of a fork. Rub the outside of the potatoes with a little canola oil or olive oil. If you plan to use sea salt, sprinkle sea salt sparingly on the outside of the potatoes.
- Place potatoes on baking sheet and bake for 50-60 minutes or until cooked through. Remove from oven and let sit to cool. They need too be cool enough to handle.
- Preheat oven to 450℉.
- Cut potatoes in half lengthwise. Use a spoon to scoop out the flesh of the potatoes leaving ¼" – ½" around the inside of the potato skins.
- Melt butter and whisk in Lauri Lee's Ultra Low Sodium Garlic & Herb Seasoning Blend. Use a basting brush to brush over the tops and bottoms of the potato skins.
- Place back on the original baking sheet and place back in oven for 10 minutes. Flip potato skins and bake another 10 minutes.
- Top each skin evenly with cheeses and bacon and return to oven for 5 minutes or until cheese is melted.
- Remove from oven, top with green onions (optional) and Lauri Lee's Low Sodium Party Dips, any flavor (or try them all), prepared in sour cream or plain yogurt.
